Abstract

This study characterizes Bacillus spizizenii VSMKU0112-derived extracellular polymeric matrix (EPM), named β-glucoribofructan (β-GRF), a heteropolysaccharide of β-linked fructose, glucose, and ribose. β-GRF showed antioxidant, antidiabetic, anti-inflammatory, and antilipidemic activities. Simulated gastrointestinal digestion and gut microbiota studies revealed enhanced short-chain fatty acid production and improved microbial colonization, suggesting potential therapeutic impact in metabolic-regulated inflammatory bowel disease.
